Ingredients:

  • 2 cups fresh figs, stemmed and quartered
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar

Instructions:

Using a blender, blend the figs until they are smooth

Put the fig puree, heavy cream, milk, sugar, and salt in a medium saucepan

Stir the mixture often over medium-low heat until it comes to a simmer

Taking it off the heat, add the vanilla extract and mix it in

Put the mixture in a bowl and cover it with plastic wrap

Press the wrap directly onto the mixture's surface to keep a skin from forming

Put it in the fridge for at least 4 hours or overnight until it is completely cold

After the mixture has been chilled, use an ice cream maker according to the directions that came with it

Add the chopped chocolate to the ice cream maker during the last few minutes of work

Move the churned ice cream to a container that can go in the freezer

Freeze for 4 hours or overnight, until it is firm

Chicken Burger with Roasted Tomato Jam and Aioli

Instructions:

In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, salt, and pepper

Mix until well combined

Form the mixture into 4 burger patties

Preheat your grill or stovetop grill pan over medium-high heat

Cook the chicken burgers for about 5-6 minutes per side or until fully cooked through and no longer pink in the center

While the burgers are cooking, toss cherry tomatoes with olive oil and roast in a preheated oven at 375F 190C for 15-20 minutes or until they burst and become slightly caramelized

In a small bowl, prepare the aioli by mixing together mayonnaise, lemon juice, Dijon mustard, and minced garlic

Set aside

Toast the burger buns on the grill for a minute or until they are lightly browned

To assemble the burgers, spread a generous amount of roasted tomato jam on the bottom half of each bun

Place a chicken burger patty on top of the jam, followed by a lettuce leaf and sliced pickles

Spread aioli on the top half of the buns, and place them on top of the burger patties to complete the burgers

Serve the chicken burgers with your favorite side dishes and enjoy!

Ritz Rolo Bark



The buttery goodness of Ritz crackers and the caramel and chocolatey goodness of Rolo candies are combined in Ritz Rolo Bark, a sweet and salty treat that is finished with a gorgeous chocolate drizzle. This dessert is simple, delicious, and appropriate for any gathering.

Ingredients:

  • 12 Ritz crackers
  • 12 Rolo candies
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup white chocolate chips
  • 1/4 cup chopped nuts optional

Instructions:

Line a baking sheet or tray with parchment paper

Lay out the Ritz crackers in a single layer on the parchment paper

Place one Rolo candy on top of each Ritz cracker

In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring in between, until smooth and fully melted

  • 1 cup rolled oats
