Ingredients:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 egg
- Salt and pepper to taste
- 4 burger buns
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1/4 cup red onion, finely chopped
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon minced garlic
- Lettuce leaves for garnish
- Sliced pickles for garnish
Instructions:
In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, salt, and pepper
Mix until well combined
Form the mixture into 4 burger patties
Preheat your grill or stovetop grill pan over medium-high heat
Cook the chicken burgers for about 5-6 minutes per side or until fully cooked through and no longer pink in the center
While the burgers are cooking, toss cherry tomatoes with olive oil and roast in a preheated oven at 375F 190C for 15-20 minutes or until they burst and become slightly caramelized
In a small bowl, prepare the aioli by mixing together mayonnaise, lemon juice, Dijon mustard, and minced garlic
Set aside
Toast the burger buns on the grill for a minute or until they are lightly browned
To assemble the burgers, spread a generous amount of roasted tomato jam on the bottom half of each bun
Place a chicken burger patty on top of the jam, followed by a lettuce leaf and sliced pickles
Spread aioli on the top half of the buns, and place them on top of the burger patties to complete the burgers
Serve the chicken burgers with your favorite side dishes and enjoy!
