Oats Veggie Pancakes



These Oats Veggie Pancakes are a healthy and tasty way to start the day. These pancakes are healthy and filling because they are full of healthy oats and bright vegetables.

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup grated carrots
  • 1/2 cup chopped spinach
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup shredded cheese optional
  • 1/2 cup milk
  • 1 egg
  • 1 tsp baking powder
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions:

In a blender, pulse the rolled oats until they resemble a coarse flour-like consistency

In a mixing bowl, combine the oat flour, grated carrots, chopped spinach, diced bell peppers, chopped onions, and shredded cheese if using

In a separate bowl, whisk together the milk, egg, baking powder, salt, and pepper

Pour the wet ingredients into the dry ingredients and mix until well combined

Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking oil

Pour a ladleful of the pancake batter onto the skillet and spread it into a circle

Cook for 2-3 minutes on each side or until golden brown and cooked through

Repeat the process with the remaining batter, adding more oil to the skillet as needed

Serve the oats veggie pancakes hot with your favorite toppings
