Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 cup white chocolate chips
- 1/4 cup yellow sprinkles
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, whisk together the flour, baking soda, and salt
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined
Gradually add the dry ingredients to the wet ingredients and mix until just combined
Fold in the white chocolate chips
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving some space between each
Gently press a few yellow sprinkles onto the top of each cookie dough portion
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once completely cool, carefully layer the cookies in clean mason jars, alternating with layers of parchment paper, to create a 'jar' presentation
Seal the jars and decorate with ribbons or labels as desired
